A Spanish dish originating from Andalusia, the origins of Gazpacho go way back, with many citing that the first Gazpacho was tried and tested sometime between the 8th-13th centuries and the recipe hasn't changed a huge amount since then. A classic Spanish Gazpacho traditionally combines tomatoes, green peppers, garlic and olive oil and is best served chilled - the ultimate refresher.
