A refreshing combination of Spanish tomatoes, peppers and extra virgin olive oil, Gazpacho is the the go to dish of the summer season but what actually is it and how can it help improve your health and diet?
A Spanish dish originating from Andalusia, the origins of Gazpacho go way back, with many citing that the first Gazpacho was tried and tested sometime between the 8th-13th centuries and the recipe hasn't changed a huge amount since then. A classic Spanish Gazpacho traditionally combines tomatoes, green peppers, garlic and olive oil and is best served chilled - the ultimate refresher.
Often enjoyed at lunchtime but also for breakfast, brunch or as a snack, it's super versatile and many people like to zhoosh things up with added garnishes - from crispy bread croutons to aromatic herbs or even a drizzle of extra olive oil (or a dash of pesto if you dare to be different!).
